Coffee overview Our 2025 Winter seasonal blend is full of warming, sweet and comfortable flavors. Profiled to a medium roast to play nicely as a black coffee, with milk, or as an espresso drink. Acidity: tartSweetness: heavy brown sugarBody: baking spice, slight roast Brewing evaluation Rest: 10+ days recommended Filter eval day 1: Gabi Gentle Recipe of 1:17 shows a heavily bodied cup, with high sweetness, and good balance between baking spice and brown sugar. Punctuating is some cranberry tartness and a little mulled wine, increasing in presence as the cup cools. Slightly roasty finish. Should play nicely with milk. We use 60 hardness, 20 buffer water heated to 198F in all of our recipes.
