Coffee overview One of two lots coming from the Daye Bensa washing station Rumudamo, which sits at 2,200 masl in Sidamo. This lot is the natural and shows plenty of deeply sweet red and purple berries and fruits in the cup. It offers a beautiful contrast to its companion washed lot, showing similar flavor characteristics in the tartaric (grape) and floral components. This cup is highly sweet! Coffee flavor profile Grape candy, strawberry compote, lavender. Acidity: tartaric, softSweetness: syrupy, jammyBody: floral, lingering Brewing evaluation Rest: 30+ days recommended Filter eval day 1: Gabi Standard Recipe of 1:18 shows a deeply sweet cup, with soft acidity which becomes more intense as the cup cools. Initially, big candied sweetness dominates. The cup turns slightly floral into the finish with lots of linger. We use 60 hardness, 20 buffer water heated to 198F in all of our recipes.
