Sifted Bread Flour, Hard Red & White Wheat, Camas Country Mill
This Organic Sifted Bread Flour, a 50/50 mix of Hard Red and Hard White Wheat, is grown on Huntons' Farm in Junction City, Oregon. It is milled and sifted at Camas Country Mill in Eugene, Oregon. Stone ground at the mill in small batches helps retain optimal freshness. The slow milling process does not heat the grain or flour, so the nutritional benefits of the Hard Red and Hard White Wheat remain intact. Sifted (also known as bolted) is the process in which the milled flour goes through screens to remove some of the bran. The extraction rate is usually 75-80%, which means that most of the bran is intact. The bran that makes it through the screens is very fine, eliminating the need for further sifting. Our Organic Sifted Bread Flour is great for baking breads or muffins. Best if stored in a cool, dark place.
