Costa Rica Finca Mirella - Light Roast Mariana, Whole Beans

  Lots of Blackberry Jam, Dried cranberry flavors with a winey boozy acidity and intense, candy-like sweetness. From Las Lajas Micromill — a renowned Costa Rican mill and the source of some of our most memorable coffees last year. This release introduces Mariana, a new varietal for us, created from IAPAR 59 and an Ethiopian landrace, designed to combine resilience with exceptional cup quality. This coffee went through the natural process Alma Negra or "Black Soul", where Ripe cherries are carefully selected, then dried on raised beds for about a week with frequent turning. They’re moved to a greenhouse patio, spread thin by day to absorb sun and gathered at night, repeating until fully dried.
