Mexico Chiapas - Medium Roast Bourbon, Typica, Mundo Novo, Whole Beans

Grown in the highlands of the Sierra Madre de Chiapas beside one of Mesoamerica’s largest cloud forests, this coffee comes from Comon Yaj Noptic (“all of us think”), a cooperative founded in 1995 by smallholder farmers from local Indigenous communities. About 160 members cultivate Typica, Bourbon, and Caturra at ideal elevations in a lush buffer zone near the Guatemalan border (Huehuetenango-like potential). Certified Organic since 2003 and Fair Trade since 2009, this specific lot is produced by the women members, with a premium paid directly to them to advance gender equity in the region. Expect clean, bright acidity, high sweetness; cocoa and tropical papaya.
