El Salvador 'Sugar Maples' Farm
This exquisite microlot from producer Roxana Yamileth Zelaya Guardado and her "Sugar Maples" farm was awarded 13th place in the 2022 El Salvador Cup of Excellence competition (any coffee that places in C.O.E. competitions is considered to be elite). The moniker "Sugar Maples"was given to Roxana's farm due to the presence of trees that have leaves similar to maple. Most of the eight workers on the farm are young people who are helped with education. Roxana's family teaches them to be responsible with an eye toward a better quality of life. The pacamara variety here offers some unique experiences in the cup, and the natural (dry) processing of the beans offers a well-balanced, fruity (but rounded) flavor.
