The crop takes 3-4 years from nursery-to-harvest when they are dragged up for harvest. Their farm is located in Broad Cove, a shallow and wide cove in the middle of Casco Bay with productive clam and mussel beds. The bottom is made up of firm mud and shell hash [substrate made up of broken and crushed shells], which when paired with low density planting results in large well shaped oysters.
