There are important differences in how Biscotto stones are made and in the quality provided by different manufacturers. The ITALX Biscotto stones, which offer superior performance and results for pizza baking, are made by hand by Italian artisans, without the use of machine presses. This traditional method preserves the natural air pockets in the mix, enhancing the stone's heat retention and ensuring a more uniform heat release during cooking.
