This medium roast offers a captivating tasting profile of cocoa, floral, and citrus tones, providing a rich and aromatic experience. Sourced from smallholder farmers in the Molino Norte region of Matagalpa, the coffee features Yellow and Red Catuai, Catimor, and Parainema varieties grown at altitudes of 900-1590 meters in clay mineral soils. The fully washed process, with fermentation for 12-14 hours and drying on patios and raised beds, ensures a clean and vibrant cup that reflects the unique character of Nicaragua's coffee heritage.
