The Elk Tri Tip is very much like a steak. Strong in flavor, but quick to cook and tender. Despite the fact that these are in limited supply, the value is excellent. You get 85% of the tenderness of our premium steaks for 1/2 of the price. A small Elk Tri Tip starts at 16 ounces (a pound), and larger cuts are up to 24 ounces. Depending on your appetites, that’s dinner for five or just two.Why are these Tri Tips so rare?First, the supply of Rocky Mountain Elk is dwindling. It’s more difficult to farm raise elk every day. The cut is also a factor. There are only two tri tips per elk, cut from the shoulder region like a sirloin. On an elk, this muscle is narrower.That’s why Elk Tri Tip is in short supply. I’d be very surprised if you see it at your local butcher or specialty grocer. Yet this cut is an obvious alternative to sirloin because, like sirloin, the tri tip muscle packs a ton of umami roast flavor.
