They have a super sweet flavor and crunchy texture. The peppers start off purple, turn green, and then finally a bright red at full maturity. However, they can be harvested and eaten at any color stage. Plants are high yielding and produce peppers that are on average about 6 inches long with a pointy end. Usually, people fry them up, but they're also really good to eat fresh. The purple color really stands out in salads and other dishes. When sliced, the interior is a bright green color while the exterior skin is purple. Peppers are slow to germinate and slow to start growing to transplant size.
