Situated in the hills surrounding an old Spanish farming village, our olive orchards have been cultivated for generations on a Family Farm. Our olives are carefully handpicked from certified organic, ancient heirloom trees. Our ancient trees are strong and nutrient rich due to ancient farming techniques that safeguard the soil, producing high polyphenol olive oil. Most of today's olive trees are GMO hybrid trees which bear fruit after 3 years whereas our Heirloom Olive trees only bear fruit after 20 years. For most producers, the economic incentive to harvest quickly overrides the health benefits of using heirloom trees. The new GMO trees do not contain high nutrient levels and do not have the life expectancy of our heirloom trees.
