Kimchi Salt

Whew - this one is so tasty it's hard to describe.  First, here's how we make it: we take Volcano Kimchi's Smokeshow kimchi made with Korean red chili powder and fermented cabbage, dehydrate it for two full days, grind it up and create a tasty powder you can smell a few rooms over.  Then we blend it with ground and dried Just Salt, a hint of onion powder and a pinch of Gochugaru.   The result? It's got the tanginess of real kimchi, plus a gentle heat to tantalize the taste buds, followed by an earth umami flavor.   It's the iconic kimchi flavor you can take anywhere.   We love to use this salt in Perfect Eggs with Josu Kimchi Salt.
