Yields are relatively low with very small and highly concentrated berries and very thick skin to withstand the extreme climate (very cold winters and hot and drier summers). Each variety is fermented separately for 10 days with the skins in stainless steel tanks that do not exceed the temperature of 24 degrees, so the wines get a very nice extraction, making the best of the thick skins.
