Katsu generally refers to a fried meat cutlet or seafood that is the epitome of comfort foods in Japan. This dish epitomizes vegetables and fried chicken. Katsu curry is the marriage of comforting panko fried chicken breast over a bed of rice and a medley of mushrooms, kabocha squash, carrots, celery, garlic, ginger, and flavored in our own roux of curry powder, garam masala, butter, and wheat flour.
