This was one of Kitchen Arts and Letters founder Nach Waxman’s all-time favorites, and we’re very happy to have a spare copy.  Evan Kleiman, long-time LA restaurateur, was co-author with Viana La Place of the brilliant Cucina Fresca trio. This stand-alone work (1993) on Italian fish and seafood cooking is a triumph of home-style simplicity and high flavor. Try Kleiman’s Ligurian oil-filled clams; pesto pizza with shrimp; devil’s penne with fried calamari; risotto with mussels and porcini; or halibut topped with rich garlic mashed potatoes.
