A tostonera is a wooden (and sometimes plastic) plantain press used to make “Tostones". Tostones are flattened out round discs of plantain that are Fried up, pressed in a Tostonera, then refried. The process is simple. Plantain slices are fried until softened up and then removed and drained. The Plantain slices are then laid in the bottom of the press then pressure applied to flatten out the slice. The slice is then returned to the pan to complete the cooking process.Delicious and easy, anyone can make them. Peel the plantains and cut them in more or less big chunks (depending on the diameter of banan pese that you want to obtain) Fry the pieces of plantain in hot oil for 5 minutes on each side or until lightly brown; then remove the plantains and place them on paper towels to remove excess oil.
