Minimum 93% chymosin, 7% pepsin.  Pepsin component may create desirable flavors and aromas in aged cheeses. Refrigerated shelf life 9 months.  CONTAINS: Rennet extract, sodium chloride; and, as preservatives: sodium benzoate, sodium salt of parahydroxybenzoic ethylic ester and methyl ester. Contains:  Calf rennet, salt, and sodium benzoate.
