Xin Yang Mao Jian

This exceptionally fine green tea is a famous specialty of Xin Yang county in Henan Province in China.  Mao Jian, meaning "downy tips," is made from young leaves rolled tightly into tiny needles to create a lovely, aromatic tea. The leaves yield a pale yellow brew with a bright, sweet, and smooth flavor. The liquor is silky and buttery with a hint of umami.  This tea really shines when steeped briefly at low temperatures.
