Honduras Jose Esteban Outturn #2
We were able to get something very special and very nerdy from Honduras this year: Two harvest outturn separations from the same farm, the first of which is Outturn #1. Pro coffee mills separate all lots brought in from a farm based on when they were harvested. If a harvest takes 8 weeks across a farm, each week of the harvest gets separated and we are able to taste all lots and pick the top scoring outturns. Lower level mills blend it all together, or even often blend all the harvests and all the farms together and sell them just labeled as the region "ie Antigua fair trade". San Vicente is all pro and we are so thankful to them for this. Given this clarity we have gained access to, we thought it would be fun to share this with you as well. Outturn #2 brings a more mature fruit profile like the coffee has had time to develop into another level of sophistication.
