(Re)Introducing our limited release Mexico Sicobi, a truly unique and flavorful coffee experience that transports you to the stunning Sierra Sur region of Oaxaca, Mexico. Our coffee is sourced from the small-holder producers of Sicobi, a community system founded by the non-governmental organization GAIA with a mission to preserve biodiversity and natural resources. Grown at elevations of 1,300 - 1,900 meters above sea level, our fully washed coffee has a cup profile that is similar to a natural coffee due to the dry micro-climate of the area and the wooden tanks used for fermentation. The result is a coffee that is bursting with flavor, featuring fruit-forward notes of clementine, cranberry, and stone fruit, accompanied by a sweetness that mirrors brown sugar. Our light roast highlights the unique flavors and complexities of this single origin coffee.
