Each healthy cookie at Laura’s WJF is inspired by real life experiences from Dr. Laura’s life. It all started with Dr. Laura’s childhood love of Girl Scout Thin Mint cookies: "Girl Scout Thin Mint cookies were a favorite of mine growing up. I loved the chocolately, minty taste, but I always wanted to make a healthy cookie version with that same great flavor. At first, I experimented with our healthy cookies to see if I could find a way to coat one of our existing bite-lettes ® with chocolate. After experimenting with different types of coating chocolate, I couldn’t find one that met my expectations for wholesome ingredients. I was advised to use something called “chocolate compound” that had ingredients I couldn’t pronounce and cane sugar. I don’t think so. Instead, I found that by adding a few extra chocolate chips I was able to substantially increase the richness of the cookie. Next, I looked for mint. Finding the right type of mint was a daunting task. There are so many types of mint to choose from, and I had to decide what form was best — oil or natural flavor — to make the best tasting healthy mint fudge chocolate cookie. I wanted it to taste yummy, not like a cough drop! Some of my earlier attempts cleared everyone sinuses they were so strongly minty! It took six to nine months of trial and error to get the right type and intensity of mint. Finally, I was able to produce the perfect balance between the two.
