These are antique French riddling racks, used in champagne making. Remuage or riddling is the process that collects the yeast and sediment in a bottle and concentrate it near the mouth of the bottle. After initial fermentation in the bottle, the bottles are inclined at a 45-degree angle on a riddling rack, which is typically made up of two simple rectangular boards hinged at the top. These racks may have been placed in a larger structure to be kept at the proper angle. They are the same height, but two different widths. The holes are all uniform, but each rack holds a different number of bottles. Smaller rack measures 8.5" W x 102" L x 1.5" D.
