The coffee is then fermented in the cherry for 24 hours. After this period, the cherries undergo the pulping process. Following pulping, the coffee beans are washed and finally, sun-dried. Why We Love It:This coffee is a beautiful expression of the Chiroso variety. It stood out to us on the cupping table with its yummy guava sweetness and refreshing hint of mint. We had to have it.
