These are left to ferment for 48 hours in cherry form. After this stage, the cherries are depulped and transferred to a fermentation tank for an additional 72 hours. During this time, careful temperature regulation and consistent movement optimize the fermentation process. By the third day, the coffee develops a distinct fermented aroma, reminiscent of a fruity pineapple liqueur. This scent signals that it's time to wash the coffee.
