Mushroom Ketchup
Mushroom ketchup is a throwback to the original, liquid fermented condiments that eventually inspired tomato ketchup. This earthy and slightly sweet version, with a soy sauce-like consistency, was made by our friends at Arcadia Venture, and includes a dozen varieties of mushrooms. Each one adds something special to the blend; there's porcinis for aromatics, shiitake for serious umami, and oyster mushrooms for a subtle briny bite. The mushrooms are fermented with garlic, herbs, and spices, then finished with sorghum molasses and our ramp vinegar. The result is a deep and rich—and historically significant!—condiment with profound umami that’s reminiscent of Worcestershire sauce. Use it in stir fries, over rice, and on your favorite hot dogs.
