Sweet potatoes

For the first time in a few years, we have had a good sweet potato year. They are plentiful, and, in some cases, BIG. Plan on peeling the Grand and Venti sizes thickly--they often have skin problems even though the flesh is fine--and using them for applications where they are sliced, chopped, or pureed.  Normal two pounds made up of 2-3 reasonably-sized sweet potatoes ($2.50/lb).  Large one three pound sweet potato, or one big and one little ($2/lb) X-large one four+ pound sweet potato, or one big and one little (<=$2/lb)
