Tie Guan Yin

Tie Guan Yin (Iron Goddess of Mercy) is a legendary oolong tea that originated in Anxi, Fujian Province during the 18th century. Ti Guan Yin is considered a premium oolong and ranks in the top 10 for most beloved oolongs. Production is time-consuming and requires mastery throughout all 7 steps: harvest, sun withering, cooling, tossing, fixation, hand rolling, and drying. According to legend a devout Buddhist monk who prayed regularly to the Goddess of Mercy dreamt of a magical plant, which he discovered the next day. The bush was remarkably fragrant and smelled of orchids. The monks believed it was a gift from Tie Guan Yin, and so they named the tea made from its leaves in her honor.
