Ingredients: Organic Brown Rice Flour Spring Water You can feed your gluten free starter any gluten free flour you would like as long as it does not have xantham gum as an ingredient. Rice flour or brown rice flour works best for the starter feedings and to get it going... or others which i have had success with are buckwheat, Amaranth, Quinoa, almond, coconut, or millet.. Sorghum will work too and some say cassava works, it technically should, or you can mix cassava with any of the other. As far as the all purpose blends, Bob's Red Mill makes an all purpose flour with no xantham gum which is good as well. You can use flours with xantham gum for bread recipes using your starter, but not for the daily feedings Xantham gum is a thickening agent which would definitely impact the desired consistency and also affects the fermenting process as its technically
