This bread has a hearty crust, and a flavor tinged with the earthy tang of rye. Bobolink's breads are made from regionally-grown organic grains and other local ingredients. They are slow-risen with natural starters (a bit of yeast is added in a few of the styles), and baked in Bobolink's wood-fired oven. The combination of slow fermentation and intense heat during baking gives their breads excellent flavor and an extended shelf-life at room temperature.
