Unit Price: $4.26/each The word 'epi' comes from an ancient word for wheat: long baguettes are rolled, then cut to look like sheafs of wheat. Both elegant to look at, and convenient to eat (each of the segments along the 'stalk' of the epi tears off easily into an individual roll). Full of the herbal, woody flavor of fresh rosemary, Bobolink's epi is a great accompaniment to soups, salads, and cheeses. Bobolink's breads are made from regionally-grown organic grains and other local ingredients. They are slow-risen with natural starters (a bit of yeast is added in a few of the styles), and baked in Bobolink's wood-fired oven. The combination of slow fermentation and intense heat during baking gives their breads excellent flavor and an extended shelf-life at room temperature. Made with unbleached organic wheat flour, whole oats, whole corn, starter, rosemary, salt, and yeast. Weighs 1 lb. before baking.
