Bobolink's breads are made from regionally-grown organic grains and other local ingredients. They are slow-risen with natural starters (a bit of yeast is added in a few of the styles), and baked in Bobolink's wood-fired oven. The combination of slow fermentation and intense heat during baking gives their breads excellent flavor and an extended shelf-life at room temperature. The rustic wheat is made with unbleached wheat flour, whole corn, whole oat groats, and sea salt. It is risen with a combination of Bobolink's natural starter and conventional yeast. The loaf weighs 1.5 lbs before baking.
