Watermelon Rind Pickles

I thought these strange when I first came upon them. They weren't part of my childhood but they are a southern classic that memaw used to make. The rind and a sliver of pink flesh in a sweet & sour brine are an unusual but delighful addition to your charcuterie board. These melons came from just down the road for some added Polk County goodness.
