Lost Lantern hand-selected this cask from Starlight Distillery in Starlight, Indiana. Ted Huber started Starlight in 2001 to capture the flavors of Indiana grain and fruit from the place his family has farmed for seven generations. Starlight revives the 19th-century distilling tradition of Huber's Orchard & Winery, an Indiana institution since 1843. Starlight is famous for its finishes, and this single cask shows why. Starlight took their 4-year-old bourbon whiskey and finished it for 3 months in a cask that previously held locally made barrel-aged honey from their own farm. The result is a spirit that bursts with summer freshness, with notes of fresh wildflower honey, white flowers, roses, and a honeyed yet not overly sweet palate.
