This coffee comes from Efren and his family in Huila, Colombia. While the family has owned the farm for more than two decades, they began focusing on specialty coffee in 2019, growing varieties like Pink Bourbon, Tabi, Gesha, and Caturra while experimenting with modern fermentation techniques. This lot is a blend of 60% Tabi and 40% Pink Bourbon. After harvest, the cherries are floated, rinsed, and fermented anaerobically for 70 hours before drying slowly for about 20 days. In the cup, expect notes of citrus, floral, and raspberry with a bright, elegant structure.
