Mozzarella has a creamy white and smooth appearance and texture. The flavor is mild, delicate and milky. Heritage: Italians made Mozzarella as a fresh, soft cheese with a high moisture content. Later, producers made it with lower moisture to give it a longer shelf life. After World War II, GI’s returned home with a taste for a delicious new food that they had discovered in Italy, pizza.
