Made with a rare "blood type" cling peach. Indian Rose is an intensely aromatic peach whose peal white flesh is streaked with red. When patiently cooked with sugar, the peach texture firms up rather than melts, yielding a preserve where candied chunks of peach are held in a rose colored syrup with the consistency of honey.
