70% Dark Costa Esmeraldas 2021 Harvest -September 2022

For this months' Kuia Club selection , we have a 70% dark chocolate version of the 2021 harvest of Costa Esmeraldas. Unlike our classic 65% dark chocolate made from the 2017-2018 harvest that is formulated in a bittersweet, European style with a relatively high proportion of cocoa butter, this special release is significantly darker and deeper in flavor. It’s higher proportion of cocoa solids relative to cocoa butter and different harvest year combine to produce a completely different experience and taste profile. In the factory, we can modify our formulations and processes to express the best potential of each harvest differently, but ultimately, the different cacao varieties and harvest years determine a large part of the final flavor. In this case, we decided to produce a much darker chocolate that emphasizes strong base cocoa, nuts, and espresso-like roasted notes.
