8 1/2" (217mm) High Carbon Steel European Chef's Knife with Recurve Heel, and Roasted Coffee Mazecut G-carta Maumasi Ridgeline Handle. This knife from the Smith & Bard line has an overall length of 13 1/16" (332mm), has a 2 1/8" (55mm) heel height, features a bilateral S-grind, has been heat treated to an average 60HRC, and sharpened to an overall 20 degree bevel.
