This is a rare cut of beef, due to only being able to obtain one tri - tip per side of beef. The tri-tip has very rich flavor, but lower in fat than most roasts. It can be cooked indirectly like a traditional pot roast or cut into steaks. Dry aged beef 21-18 days. Raised directly from our ranch to your table! 3- 4 pounds of luxurious meat
