Unwind Decaf

A robust decaf coffee that maintains a mellow and pleasant sweetness. Unwind consists of two separate decaf lots that both undergo the Ethyl Acetate (EA) Decaf process but come from two separate producing countries. The first lot is composed of coffee from the Sierra Productora de Café Amatenango de la Frontera Cooperative in México. These coffees are washed for 12-24 hours with some lots being fermented for an extended period of 12-84 hours. SIPRO and Amatenango work hard to improve quality amongst the extreme security risks in the region which complicate the mobility of coffee. The second lot is grown in Huila, Colombia and is composed of coffee from 850 growers from the towns of Timaná, Suaza, Elías, Tarquí, and Pitalito who deliver to the Asprotimana Cooperative. These coffees are washed and then dried for 15-25 days.
