Kokuryu 'Black Dragon' Junmai Ginjo Sake - Fukui, Japan (720ml)

Kokoryu brewery is located in the Fukui province, which is known as Japan’s ‘snow province’. The melting snow from the Hakusan mountains to the east, eventually forms the Kurzuyugawa river - translated as nine-headed dragon. The subterranean river flow, naturally filtered by rocks, is what gives Black Dragon its exceptional purity and freshness. With a 55% polish ratio, this exceptional Junmai Ginjo is brewed in the Noto style; yeast is brewed in colder temperatures resulting in a slower process which yields intensely flavored sake. A complex nose of saltwater taffy, jasmine tea and honeysuckle welcome a clean precise palate of guava and melon followed by saline minerality on the crisp, clean finish. A versatile sake, it pairs well with sashimi, soba noodles or even Waygu.
