Sea jellies, or jellyfish, are invertebrate plankton that have been drifting around the vast oceans for over 500 million years. They are composed of 92 to 95% water and breathe only through their skin. They lack a heart, brain, bones, or head. One species called Turritopsis dohrnii is biologically immortal and resides in the Mediterranean Sea and off the coast of Japan. Edible jellyfish contain a large amount of collagen in their mesoglea, a gelatinous layer between the internal and external layers of their body structure. The amino acids found within collagen support human brain cells and protect against photoaging and skin damage from excessive ultraviolet sunlight. They have also been studied to support the innate immune system by promoting cytokine production and phagocytosis activity of macrophages.
