Each of the members of Sierra Azul has an individual wet mill on their own farm, and as an organization they have protocols in place to make sure that the coffee cherries being picked are at optimal maturity. All processing of Sierra Azul from de-pulping, to fermenting, to drying on raised beds is done at the farm level, so the resulting coffee really shows off the effort and expertise that these producers dedicate to their craft. Sierra Azul is an ideal coffee to pair with breakfast. It is super sweet and easy drinking, with just a touch of brightness to give the cup some unexpected character.
