This lot follows UBA’s Culturing method, using selective picking, Brix evaluation, and a controlled anaerobic environment guided by curated yeast and lactic-acid cultures. Fresh wild passionfruit (maypop) serves as the primary substrate, providing sugars and aromatic compounds that the seed absorbs before moving through a gentle three-stage drying process designed to preserve its vibrant character. The cup is bright and refreshing, opening with juicy passionfruit acidity, followed by a ripe raspberry sweetness and the clean, floral clarity of hibiscus tea.
