From the beginning, Beanspire has faced significant challenges, a reality they openly acknowledge. Despite these hurdles, they continue to produce exceptional coffee. Beanspire is a Thailand-based collective that works closely with farmers to hone their craft and provide access to international specialty markets. This particular coffee is processed by Noi Duongdee, a veteran of the Thai coffee industry with over 10 years of experience. Noi began his career working at one of Thailand’s pioneering mills in the specialty coffee sector before establishing his own processing plant in Chaiprakarn, Chiang Mai. For this black honey coffee, the cherries are harvested throughout the day and left to rest overnight at cool temperatures. The next morning, they are pulped. This delayed pulping, combined with controlled temperatures, enhances the coffee's complexity.
