First Run Organic Maple Syrup

2025 First Run Maple Syrup ***SOLD OUT Until 2026*** Last year, First Run Syrup was produced on an unseasonably warm February day and we had very little snow, which resulted in a bolder flavor than we are used to. This year, we didn't produce First Run until March 9th, and even then we had nearly four feet of snow on the ground!  The sap was cold and crisp and we produced a more traditional First Run Syrup. The 2025 First Run Syrup is exceptionally clean and crisp on the palate with a very delicate maple flavor and a lovely sweet finish.  You can imagine this as the first thaw after months of frozen winter slumber, with snow piled up to the windows.   This run was a hint of the spring to come.    Every year, after the sap lines are flushed out by the first few spring thaws and the evaporator pans have been seasoned, we enjoy what we call First Run Maple Syrup.  This early season boil is when the trees finally thaw out and truly gush sap for the first time.
