Spekulatius Cookies
Spekulatius are buttery gingerbread cookies similar to Biscoff and windmill cookies. Traditionally, these cookies were left to good children in Holland, Belgium and Northern Germany by “Sinterklaas” on the eve of St. Nicholas Day, December 6th! Because Spekulatius is a nice sturdy cookie, they are great for dunking and make delicious ice cream sandwiches! Spekulatius, like most Lebkuchen, will stay fresh for several weeks while stored in an airtight container or tin.
