This lot features red and yellow Castillo cherries, dried using a combined fermentation technique: 50 hours aerobic, followed by 12 hours anaerobic. The result is a layered profile bursting with cacao nibs, ripe plum, strawberry, and blackberry—deep fruit complexity balanced by a silky, grounded finish. This coffee arrives in the U.S. thanks to Paisa Coffee, a direct-trade importer founded by Yolima Taborda Rojas. Paisa was born from a bold idea: Yolima once brought her entire parents’ farm to the U.S. market to prove Colombian producers could thrive in the specialty space. That conviction now fuels relationships like this one, connecting intentional growers with roasters who value traceability, vibrancy, and story.
