The Wilderness Trail Kentucky Straight Bourbon Whiskeys are produced in Small Batches, with up to 18 barrels per batch, each originating from a single fermenter. By blending barrels from the same fermenter, the Small Batch aims to capture a more complex flavor profile. Wilderness Trail has chosen to release this Small Batch Bourbon as a Bottled in Bond, allowing fans of the Wheated Small Batch Bourbon to conduct a side-by-side tasting. The mash bill for the Small Batch release consists of 64 percent corn, 24 percent rye, and 12 percent malted barley, utilizing our own unique yeast strains.
